Butternut Squash Soup II

Comments:  Even our 5 year old loved this.  I used a 1 1/2 pound butternut squash and omitted the celery and salt.  I also baked the squash first as some of the commenters on AllRecipes suggest, but may not do that every time.  I had a serving with a dollop of sour cream and without and both were delicious.

Chinese Chicken Fried Rice II

Comments:  My family really likes this fried rice and I love how easy and forgiving it is.  This week I used one chicken breast and then loaded it up with veggies including yellow squash, onions, bell peppers, peas, diced tomatoes (added at the end), etc.  It is good made as vegetarian fried rice as well.  Enjoy!

Comments:  I’ve used pork stew meat instead of tenderloin and regular tomatoes instead of grape.

Glazed Pork and Pineapple Kebabs

  • pork tenderloin
  • 1/2 pineapple
  • 1 red onion
  • 3/4 cup grape tomatoes
  • salt & pepper
  • 1/4 cup honey
  • rice
  • cilantro, chopped

Cut 1 pork tenderloin and 1/2 pineapple into 1-inch chunks.
Cut 1 red onion into wedges.
Thread the pieces onto skewers with 3/4 cup grape tomatoes and season with salt and pepper.
Broil on foil-lined baking sheet, turning once and brushing occasionally with 1/4 cup honey, until browned (usually 8-10 minutes).
Serve with rice and sprinkle with chopped cilantro.

Comments:  This is absolutely delicious.  It’s really pretty with red onion and cheddar cheese, but I have also used yellow onion and white cheese before.  I have also used turkey bacon.

Broccoli Salad

 

Ingredients

  • 2 bunches broccoli flowerets, raw & chopped
  • 1 medium purple onion, diced
  • 1 cup grated cheddar cheese
  • 6 strips bacon, cooked and chopped
  • 1/2 cup raisins

Dressing

  • 1 cup mayo
  • 1/2 cup sugar
  • 2 T red wine vinegar
  • 1/2 t salt

Mix all the salad ingredients in a medium sized bowl.  Mix the dressing in a separate bowl and then mix into the salad.  Serve chilled or room temperature.
